▢ 2 1/2 lb Panko Chicken (I get mine from Costco). Cook following the package instructions, let it cool, and then dice it into pieces.
While the chicken is cooking make the sauce:
▢ 1 cup MAYO
▢ ½ cup SWEET CHILI SAUCE
▢ 1 tsp SRIRACHA, or more to taste
▢ 2 TBSP HONEY
Combine all the ingredients in a large pan and whisk until well mixed. Bring the mixture to a boil, then turn off the heat.
Add the diced chicken to the pan and toss until fully coated. Serve over rice.
