Here’s my take on the Disney-inspired Star Wars Wookie Cookie!

I tried making this cookie three times! The first one was way too sweet. The second turned out too soft and not chewy enough. But the third time, I nailed it! I used the cream cheese frosting we use at our shop, but you can use any frosting you like, such as cream cheese, , or even marshmallow cream.
It Took me three times to nail this recipe. The first time was too sweet. The second time it wasn’t chewy. It was too soft. The third time I felt like it was perfect. I use our cream cheese frosting that we use at our shop, but you could use any frosting that you would like cream cheese, frosting, buttercream frosting, marshmallow cream, but here’s the recipe for my oatmeal chocolate chip cookies that I used to sandwich the Wookie cookies.

OATMEAL COOKIES -using a PADDLE attachment 
Makes around 24 cookies or 12 sandwiches 

  • ¾ Cup BUTTER 🧈 > Heat 1 MINUTE, (MELTED)
  • ½ Cup SUGAR  
  • ¾ Cup PACKED LIGHT BROWN SUGAR
  1. In a bowl, add the butter, sugar, & brown sugar.
  2. On low speed, incorporate ingredients (about 30 sec)
  3. Change to HIGH SPEED, Mix for 30 sec to 1 min (until sugar is Incorporated) Scrape sides and bottom
  • 1 LARGE 🥚 EGG
  • 1 LARGE EGG YOLK
  • 2 tsp VANILLA

Add eggs & vanilla -On low speed, incorporate ingredients

  • 2 ¼ Cup FLOUR
  • 1½ tsp CINNAMON
  • 1 tsp BAKING SODA
  • 1½ tsp CORNSTARCH
  • ½ tsp🧂 SALT

Add flour, cinnamon, baking soda, cornstarch and salt.
On low speed, mix for 30 seconds DO NOT OVER MIX!!

2 Cups QUICK INSTANT OATS
1 Cup SEMISWEET CHOCOLATE CHIPS
1 Cup MILK CHOCOLATE CHIPS

On low speed gradually fold in OATS & chocolate chips. 

Drop about 2 heaping tablespoons of dough onto a greased cookie sheet using a cookie scoop or spoons.
Bake at 350°F for about 10 to 15 minutes, depending on the size of your cookie and your oven.

Allow your cookies to cool before adding frosting. For the sashes, use fondant or long tootsie rolls painted with edible white food coloring.
