My heart is aching for the Schroeppel family. Owner of @cocolitosmexican Scott Schroeppel passed away unexpectedly on Thursday, Feb. 21st at his home in Highland. They opened Cocolitos the same time we opened up Cravings. We have watched their kids grow up, become good friends with Scott and his wife Enedina Alas. We watched a husband & wife work their butts off to provide for their family. This unexpected loss, the family is keeping the restaurant closed for the next couple of days as they make necessary preparations due to his passing.
We want to show our support for our friends at Cocolitos, by donating 100%of our sales today and tomorrow to their beautiful family, who lost a wonderful husband and father this weekend. Plus we have started a donation account which 100% of all proceeds donated will go to their family!
Scott Brian Schroeppel was born on June 8, 1964 in Marshalltown, IA. He was the eighth of eventually 11 children in his parent’s family. Scott enjoyed working with his hands and was always looking to build or create something new. He moved with the family to Provo in 1978, graduating from Provo High School. Around this time Scott began working as a cook at local Mexican Food Restaurants. It was at work that he met and later married the love of his life, Enedina Alas. They established @cocolitosmexican Fine Mexican Food restaurant in Lehi, eventually moving its current home in Pleasant Grove. Together they have five children, and two grandchildren. A family-run business, you could always find them working together long hours, preparing and serving delicious classic Mexican foods and specialty dishes of their own creation.
